Atomic Buffalo Balls

Welcome to my smoking meats recipes site. Visit my recipe list for the complete list of smoked foods. My smoked meats recipes will be changing indefinitely as I plan to improve existing recipes and add new ones on a continual basis. Recipe Information

Ingredients:

1 lbs. ground buffalo
1 lbs. ground turkey
1 1/2 lbs. Ground maple sausage
1/2 Stick of butter
6 slices of smoked Gouda cheese
1/2 cup of Frank's Redhot
2 Habanero peppers
2 Jalapeno peppers
2 slices chopped orange bell pepper
1/2 tsp cream cheese
1/2 tsp raspberry jam
Garlic powder
Green onion
brown sugar
Jack's Old South Original dry rub
Yoshida Sauce

Atomic Sauce:  Mix 1 cup Sweet baby rays, 1 cup diet Cherry Dr. Pepper and 1 Tbsp brown sugar and 2 drops (only 2!) of Da Bomb final answer.

Warning! - Da Bomb Final Answer is a Habanero pepper extract that has a heat rating of 1.5 million scoville units. Scoville units is the standard measurement for heat in sauces and peppers. To put things into perspective Tabasco is rate in the 20,000 scoville unit heat range. Wear gloves when handling! Do not get this or Habanero in your eyes.

Bring sauce to a simmer in a sauce pan and let cool.
 

 

 

Preparation:

Some like it Hot. This dish is smoking hot! If you wish it to be that is. You can back away from some of the components that add the heat but then you can strip the "Atomic" off the title.

First things first. Prepare the veggies and peppers. You will need to chop 2 Jalapeno peppers, green onion and some orange bell pepper. Cut the smoked Gouda slices into small pieces. Cut the top off of two Habanero peppers and clean out the seeds. Wear gloves when doing this and keep your fingers away from your eyes and face. Trust me on this...

It's time to stuff the hot and spicy core of this fireball. Squeeze jelly works great for this. Squeeze raspberry jelly into each Habanero pepper filling it 1/2 way. Fill the other 1/2 with Cream cheese.

Place the buffalo meat in a medium bowl. Add in half f the the chopped Jalapenos, 1/8 cup of Yeshiva's,  1 Tbsp brown sugar and 1/2 Tsp dry rub. Mix the buffalo meat well and form into a ball.

In a small bowl mix 2 tbsp melted butter, 3 tbsp Frank's Redhot sauce and a few shakes of garlic powder. In a medium bowl combine 1 lbs. ground turkey, 3/4 of the butter and Frank's buffalo sauce and a few slices of bell pepper that have been coarsely chopped. Mix well. You want the turkey meat to end up real moist but firm. This will need to wrap up around the Buffalo Ball.   

Now lay down some wax paper. It's easier to work on and clean up. Place 1/2 the buffalo meat on to the wax paper and form a 4 inch round hick circle. Make an indentation in the center. Pour in 1 tsp of the Buffalo sauce. Place a stuffed Habanero pepper in the center keeping it upright and surround it with chopped smoked Gouda cheese. Now fold up the buffalo meat around the pepper and form a ball so all the meat is completed encapsulating the pepper and cheese. Pour some BBQ sauce on the ball and rub it around. I like to use my own mix of 1 cup diet Cherry Dr. Pepper, 1 cup Sweet Baby Ray's and 1 tbsp brown sugar heated then cooled.

Take 1/2 of the Turkey meat and place it on the wax paper forming about a 6 inch circle. Make a indentation then add some sliced green onion and chopped Gouda cheese.  Pour some BBQ sauce on the turkey ball and rub it around. As you can see we are building many layers of flavor making this smoking recipe a unique treat.

Once the Buffalo ball is wrapped inside the turkey ball it's time to wrap the turkey ball up inside the maple sausage. Place 1/2 the maple sausage on the wax paper and form a 10 inch round circle with and indent in the center. Pour on a fair amount of BBQ sauce and mop it around leaving 1/2 inch bare around the edges. Sprinkle on 1/2 tbsp of brown sugar and rub it around on top of the BBQ sauce. Now place the turkey ball in the center of the maple sausage and wrap the maple sausage up around the turkey ball just like you did with the Turkey. Form a nice round ball.

Sprinkle on some dry rub and rub it into the meat. Sprinkle on some brown sugar and work it into the meat. This will give it a nice outer flavor. Now it's time to make the second Atomic buffalo ball. Follow the same steps above to do so. I had you do one at a time because wrapping these up sometimes can be a bit tricky. This allows you to figure things out on the first one.

Once you have two nice round Atomic Buffalo Balls formed and on cookie sheets, move them out to your smoker. Your smoker should be pre-heated to 230 degrees. Place them on the center of the smoking grate and smoke them @ 230 degrees until the internal temperature reaches 165 degrees.

When they are around 150 degrees you can start mopping them with BBQ sauce. put it on this and make several layers. Once they reach 165 degrees, smoking is complete and you may pull them from the smoker. Let them stand for about 20 minutes. While they stand, take about 4 tbsp BBQ sauce and mix it with 2 drops of Da Bomb Final Answer. This is a pepper extract that is1.5 million Scoville units of flaming inferno! It's really hot and can be purchased online. Some retailers consider this liquid gold and sell it for over $60 for a 2 oz. bottle. You can get it for under $25 on allot of sites including Amazon.com. Mix it well and use gloves when handling the pepper extract. Avoid eye contact at all cost! If you don't like heat you will want to skip this step. Mop the balls well with the new HOT BBQ sauce. Cut four orange bell pepper slices and arrange 2 in a "X" pattern on top of each Atomic Buffalo Ball as a warning label. :-)

Cut these like a pie in wedges and serve. The bravest at the table can eat the fiery core. They are delicious!
