If your a Blue Cheese lover you
will enjoy this meatloaf recipe.
This baby is fully loaded!
First things first. Get your
cooker pre-heating to 240
degrees.
Now let's get to cooking. In a
medium sauce pan sauté 8 oz. of
chopped Baby Bella Crimini
mushrooms. Sauté the mushrooms
until they have softened. Remove
from heat and let cool.
In a
medium mixing bowl combine the
following ingredients.
4 Eggs 1 Cup Worcestershire
6 Coves Chopped Garlic 5 oz.
Sun Dried Tomatoes 1 Tsp
Rosemary 1 Tsp Thyme 1 Tsp
pepper.
Mix the ingredients thoroughly.
Place 6 lbs. of 80/20
ground beef into a large mixing
bowl.
Next pour the egg mixture over the
meat. Add the following
ingredients.
1/2 sweet onion (Chopped)
1 Cup Chives (Chopped Green
Onion Tops) 8 oz. Sautéed
Baby Bella Crimini Mushrooms
1 Cup Ketchup 2 Cups Panko
bread crumbs.
Using latex food grade cloves
thoroughly mix the ingredients
into the beef. Next add 8 oz.
Crumbled Blue Cheese and thoroughly
mix the contents.
Once mixed, let the meat rest in
the fridge for a few hours to
allow the flavored to meld. Once
the meat has rested, place the
meat on a baking sheet. Divide
the meat in two portions and
form two meatloaf's.
Once you have formed the meatloaf turn
it over and
rub Ketchup on the bottom and
apply Mad Hunky All Purpose No
Salt Rub.
Turn the meatloaf back over and do the
same to the top and sides.
Pepper to taste. Let stand for
30 minutes.
Place the meatloaf's near the
center of your smoker. The
smoker should be pre-heated to
240 degrees. Cook the meatloaf
until it reaches an internal
temp of 160 degrees.
Pull the meatloaf when the
internal temperature reaches 160 degrees. Let stand
covered 20
minutes. Once rested, Slice and
serve. Slice only what you
eat. This will keep the rest of
the meat that gets refrigerated
stay nice and moist.
This is a very easy recipe to
make and requires little
preparation time.
