Great tasting chicken with little
preparation. When finished the chicken will have a nice
Teriyaki glaze sticky to the touch topped with a cooked
pineapple slice.
First thing get your pit pre-heating to 170-180 degrees.
Wood cookers can start off at 225. With the pellet smokers I
like to smoke for 1 hour at 170 - 180 degrees. It allows for
better smoke flavor in the meat. In this recipe I used BBQRs
Delight Cherry pellets.
Trim and rinse 6 large chicken breasts. In a 1 gallon
Ziploc bag mix 1/2 bottle of Teriyaki sauce, 1 cup of
Pineapple juice and 3 cloves of chopped Garlic. Place the
chicken into the bag. Removed excess air and seal it up.
Place chicken in the refrigerator to marinate for 1.5 hours.
After the chicken has marinated, use a sharp knife to
cut an opening in the large end of the chicken breast.
Holding the knife parallel with the cutting board push the
knife deep into the breast and using a sawing action open a
pocket inside the breast.
Once all the breasts are opened, begin stuffing the
pineapple chunks inside the breasts giving each one equal
amounts. Use your finger to push the mix deep inside each
breast.
Once the chicken breasts are stuffed, lightly apply
garlic powder to both side. Liberally apply Mrs. Dash Garlic
& Herb seasoning to both sides as well.
Mix 1/2 cup of Teriyaki with 1/2 cup Pineapple juice and
pour into a misting bottle. This will be used to mist the
chicken a few times to keep it moist and to build up a nice
glaze.
Put the chicken into the smoker and smoke for 1 hour on
170-180 degrees then increase the temp to 225 degrees. After
the first hour of smoking mist the chicken with the misting
bottle mix. Smoke for another 45 minutes then place a
Pineapple ring on each breast then mist them again. Smoke
another 45 minutes and mist one more time.
Remove the chicken when the internal temp of the meat
reaches 168 degrees. The smoking process takes approximately
3.5 - 4 hours depending on the thickness of the chicken and
temp fluctuations inside your pit.
That's it, you just made Cherry Smoked Maui chicken!
