If you love layers of flavor and
one hell of a juicy burger, this
burger you will most likely
enjoy. Two 5" patties rubbed
down inside and out with Tatonka
Dust then stuffed with sautéed
Baby Bella mushrooms, garlic,
green onion and a home style
gravy! Grilled over a oak wood
fire with Swiss cheese melted on
top. It's delicious to say the
least.
Let's get to cooking!
Heat your cooker up so
that you can achieve 400 degrees
in the center of a cast iron
skillet. Any pan will do but I
do recommend cast iron.
Add 1/2 stick of unsalted butter
and 8 oz. Baby Bella mushrooms.
Sauté until the mushrooms soften
up a little. Add in 1 tsp red
pepper flakes, 1/2 tsp chopped
rosemary and 2 cloves chopped
garlic. Add in another 8 oz. of
Baby Bella mushrooms and 1/2
stick unsalted butter.
Add in 8 sliced green onion.
Cook until the mushrooms are
softened up. And the green onion
start to become translucent. Add
in 6 oz. of home style beef
gravy. Continue to cook until the
gravy is heated and covers all
the mushrooms. Remove from heat.
I'm cooking on a Santa Maria
style cooker and this is a good
point to add a couple sticks of
oak wood.
Split 3.75 lbs. of 80/20 ground
beef into 8 even portions. Form
8 patties about 5" in
diameter.
Shake some Tatonka Dust on the
inside of each patty. Spoon on
even amounts of mushrooms on to
4 of the patties leaving a 3/8"
border around the edges. Place a
patty over the top and work your
fingers around the edges
pinching them shut and forming a
single stuffed patty.
Shake on Tatonka Dust on the top
and bottom of each patty. Once
your fire is appropriate and you
have achieved a grate temp of 500
degrees, place the patties on
the grates. Cook for 3 minutes
then rotate each patty 180
degrees and continue cooking for
4 to 5 minutes. Flip the burgers
and repeat the process. Flip
again and place on two slices of
Swiss cheese. If you have a hood
or door, close it and cook until
the cheese is melted. I'm a
mushroom lover so I held some
mushrooms aside and put them on
top and melted the Swiss over
them. yum!
Once the cheese has melted
remove from heat and let stand
15 minutes. Build your burger
the way you love it and dig in.
These are vey messy and
definitely worth a try. I bet
you get hooked. If your thinking
they are too big then think a
romantic burger for two and a
gold bottle of red wine. Just
saying!
