I used to do allot of
crabbing in our local Puget
Sound waters and had an
abundance of Dungeness Crab meat
on hand. I came up with this
recipe long ago and everyone who
has tried it just loved it.
Including my wife and she
doesn't eat seafood. I'm sharing
this recipes that I have been
cooking for over 20 years.
Start by cleaning and cutting
up 10 red potatoes. As you cut
them up place the potatoes in a
bowl of cold water. This will
keep them from turning brown.
Next slice up the 6 green onion
and dice 1/2 of a green pepper.
Peel and chop 5 cloves of fresh
garlic.
Pre-heat your cooker to 400
degrees. In this cook I'm using
a griddle accessory so you want
the griddle hot enough to fry
potatoes.
Once the veggies are cut up
and your cooker has heated up,
cut up 5 slices of thick cut
bacon. Place the bacon pieces on
to the griddles and brown them.
Make sure to stir frequently and
don't over cook the bacon. You
want it chewy as it will be
added to the potatoes later.
Once the bacon has browned,
remove it from the heat and
cover for later. Now add 4
cloves of fresh chopped garlic
to the bacon grease on the
griddle. Save 1 clove of chopped
garlic for later use. Add the
green onions and green peppers.
Cook them while stirring
frequently until the onions
become a bit translucent.
Drain the water from the
potatoes and add them to the
griddle. Stir in the onions,
garlic and peppers. Continue
cooking while stirring
frequently. Add some virgin
olive oil as the griddle dries
up. This way you won't burn the
potatoes. Shake on some pepper
and Creole Seasoning to taste.
Cook the potatoes until they are
soft and browned.
Next move the potatoes to the
rear of the griddle and make
enough room to cook the Crab
Meat. Place 1/4 stick of butter
on the griddle and add the
remaining 1 clove chopped garlic
as it melts. Dump the Dungeness
crab meat over the butter and
begin gently turning it. Shake
on some Creole Seasoning. We
just want heat the crab meat.
Add the bacon from earlier to
the crab and give it a few
gentle turns.
Gently mix the crab and bacon
into the potatoes. Once mixed
evenly remove the potatoes from
the griddle. That's it! It's
time to plate up your Crabby
Tater's!
I like to cook eggs easy over
and place on top of mine. These
are a real treat and very easy
to make. Have fun with this one
