Great meals don't always have to
require allot of preparation. In
this cook I will demonstrate a
simple yet delicious savory
Garlic Parmesan Chicken tenders
cook.
Start by pre-heating your cooker
to 250 degrees F. In my case I'm
cooking on the Yoder YS640
pellet cooker and burning Bear
Mountain Cascade Alder BBQ
pellets. I'm also using the
Amaze-N-Tube-Smoker by
Maze-N-Products LLC. This cold
smoke generator is used to
augment the smoke from the
pellet cooker giving a more
pronounced smoke flavor to the
chicken.
I start with preparing the
chicken. Using a sharp knife,
trim 6 lbs. of boneless chicken
breasts. You may find it more
reasonably priced to purchase
family packs as I did. Once the
chicken is trimmed, rinse the
chicken and pat dry with paper
towels.
In a medium casserole dish or
pan mix the following
ingredients.
7 Oz. Kraft
Shredded Parmesan Cheese 1 1/2 Tbsp. Johnny's
Seasoning 1/2 Tbsp. Garlic Powder 1 Tsp.
Coarse Ground Black Pepper 1/2 Tsp. Sage
Using a fork or whisk, mix the
ingredients thoroughly. Lay two
tenders at a time into the
coating and thoroughly coat.
Using your hands sprinkle the
coating all over the tenders.
Once coated set them on to a
baking sheet. Continue until all
the tenders are coated.
Once coated it's time to load
the chicken into your cooker. In
this cook I'm placing the
tenders directly onto my upper
cooking rack which I sprayed
with Pam Grill spray. This will
keep the chicken from sticking
to my grate. Place any residual
coating that may be left on the
baking sheet onto the chicken.
Close the hood and cook @ 250
degrees F until the internal
temp of the chicken reaches 174
degrees or the temp you prefer.
Once the chicken has reached the
preferred temp (which should be
at least 165 degrees F) you may
remove it. Place the chicken on
a platter and serve with the
sides of your choosing. I like
to serve mine with an variety of
dipping sauces such as Bacon
Blue Cheese dressing, Ranch
dressing, BBQ sauce and Pace
Picante sauce.
