foods. My smoked meats recipes will be changing indefinitely
as I plan to improve existing recipes and add new ones on a
continual basis. Whether you are new to smoking meats or you
are a seasoned veteran, I hope to provide a little something

5 - 6 Boneless Pork Loin Chops 1/2
Stick Unsalted Butter 1 Clove Chopped Garlic
1/2 Tsp. Sage 2 Tbsp. Honey Mustard 1/4 cup
Chopped Parsley Course Ground Black Pepper to
Taste Kosher Salt to Taste

Preparation:
This one is for the pork chop lovers. Thick nice
boneless pork loin chops slow cooked and basted in a
herb & honey mustard butter sauce. Cooked to
perfection with a savory exterior and a juicy tender
interior.
Prep Time: 20 minutes Cook Time:
Approximately 1 hour 20 minutes.
Note: Cook
times vary depending on temperature swings,
altitude, humidity etc. Always go by your meat
thermometer.
Pre-heat
your cooker to 225° F.
Let's start by
making the chopping 1/4 cup of fresh parsley. Follow
this by peeling and chopping one clove of fresh
garlic. Tip: Peeling the garlic is easier done if
you use a wide flat knife or object to rest on top
then give it a hit with your hand while keeping your
hand away from the knife edge.
Next combine
the following in a small mixing bowl.

1/2 Tsp. Sage 2 Tbsp. Honey Mustard 1/4 cup
Chopped Parsley Course Ground Black Pepper to
Taste
Once the ingredients are added to the
bowl, mix thoroughly until all the herbs are mixed
into the butter.
Now it's time to prep the
pork chops. I like to remove the fat around the
edges. If you wish to keep it, go for it. Rinse the
chops in cold water and pat dry with paper towels.
Season the pork chops with Kosher salt and coarse
ground black pepper. Again the amount you use is to
your liking. I personally went with a little salt
and a liberal amount of pepper. Place the pork chops
on greased smoking racks or Frog Matts if you got
them.
Once your cooker is up to temp, place
the pork chops center grate inside your cooker. Let
them cook for about 1 hour. After one hour mop the
pork chops with the Herb & Honey Butter evenly on
the surface.
Continue cooking @ 225° F until
the internal temp of the pork chops reaches 145° F.
At which time you can remove the chops from the
cooker. Let the chops rest for 5 minutes then plate
them up.
Serve with your favorite veggies and
give them a basting with the leftover butter if you
wish, In my case I went with steamed broccoli and
carrots.

simple recipe requiring minimal prep and cook time.
