If you like fully cooked yet super juicy chicken with a
southwest kick, this recipe is for you. Bonus! It's very low
in sodium so it's heart healthy.
Trim and rinse 14 large chicken breasts or the amount
that works for you. This is nothing more then a seasoning
the chicken recipe and throwing it on.
Inject all the breasts with apple juice. This will keep
them very moist. Make sure you use a sterile injection
needle. I boil mine in boiling water for 5 minutes to kill
off any bacteria that may have found it's way onto the
needle.
Once the chicken is injected, shake on some garlic
powder. The amount is up to you. Don't be shy about it.
Shake on some coarse ground black pepper. Next apply a
liberal amount of Mad Hunky no salt rub. This is a great
tasting rub. You will be surprised. Apply some Mrs. Dash
Southwest Chipotle seasoning.
Flip the chicken and repeat on the other side. Pre-heat
your cooker to 245 degrees. Let the chicken sit in the
refrigerator for about an hour while the cooker is
pre-heating. In this cook I used BBQr's Delight Peach wood
pellets.
Once the cooker is at temp and the chicken has had time
to season, place the chicken on the cooker. Continue cooking
@ 245 degrees until the internal temperature reaches 170
degrees. When this temperature is reached, pull the chicken
from the cooker and let stand 15 minutes.
At this time you can slice and eat what you wish and let
the rest cool and vacuum pack for later use. In this cook I
did 9 lbs of chicken. I like to slice it for sandwiches,
cube it for soups or chicken fettuccini or shred it for
Tacos. It's great in breakfast burritos or omelets as well.
Once cook like this can supply you in heart healthy meat for
the rest of the week. Pick up a package of chicken lunch
meat in the grocer and read the nutrition information. Super
thin slices (3) usually add up to 350 - 400 mg of sodium.
Ouch! Not of mention other preservatives and fillers not
found in fresh chicken right off the bone.
