Sometimes simple is best!
Easy to make and great flavor!.
This recipe includes a
marinade and marinade time over
night so plan accordingly.
In a small sauce pan combine
the following ingredients:
1 Bottle Kraft Zesty Italian
Dressing
4 Tbsp.
Mad
Hunky Hot Ass Whang Rub
1/4 Cup Honey 1 Tsp. Minced Garlic
Mix thoroughly and bring to
a low boil over medium high
heat. Reduce heat and simmer for
3 - 5 minutes. This will allow
all the flavors to meld. Let the
marinade cool in the fridge.
Once the marinade has cooled,
rinse 3 to 3.5 lbs. of chicken
party wings. These are pre
separated wings. If you can't
find these then use whole wings
and you can remove the wing tip
then separate the drumstick from
the mid section.
Pour the marinade into
a one gallon Ziploc bag. Add the
wing parts. Squeeze out as much
air as possible and zip the bag
closed. Place the wings in
the fridge to marinate over
night. Turn the bag and move the
sauce around a few times during
this process.
The following day pre-heat
your cooker to 240 degrees. I
cooked on my Yoder YS640 using
hickory pellets.
Remove the wings 10 at a time
from the marinade and place them
in a large bowl. Sprinkle them
with Mad Hunky Hot Ass Whang
Rub. Place these wings seasoned
side down on greased smoking
racks or frog mats. I like to
keep the drumsticks separate
from the mid sections. Once all
the parts are on the racks,
liberally dust them with Mad
Hunky Hot Ass Whang Rub.
Once the cooker is at temp
and the grates are cleaned,
place the chicken into your
cooker.
Take the remaining marinade
and what's left in the bowl and
place it into a small sauce pan.
Stir it up good and bring it to
a low boil over medium high heat
to kill off any bacteria from
the chicken. Simmer over low
heat for 5 minutes. Pour the
sauce into a bowl. You will use
this as a basting sauce.
After the chicken has cooked
for 40 minutes, baste it with
the sauce. Cook another 20
minutes and turn the chicken
parts over. Give the chicken
another coating of Mad Hunky Hot
Ass Whang Rub. Cook another 20
minutes then baste with the
sauce. Cook until the chicken
reaches at minimum 165 degrees.
I personally like to take my
wings up to 180 degrees so the
meat easily pulls off the bone.
Give the wings another basting
when they are within 15 minutes
of being done.
Remove the wings at 180
degrees. I placed mine on a
plate with a bowl of blue cheese
dressing in the center of the
plate. I garnished the dressing
with some Mad Hunky Hot Ass
Whang rub and chives.
