In a small mixing bowl combine 2
eggs, 1 tbsp Worcestershire, 1/2
tsp Thyme, 1/2 tsp Rosemary and
1/2 bottle of Negra Modelo. Mix
thoroughly using a whisk or
fork.
In a large bowl combine 3 lbs.
ground beef, 1 cup Panko bread
crumbs, 1 cup shredded cheddar,
chopped onions, garlic,
mushrooms and egg mix. Using
your hands (with gloves), knead
the ingredients into the meat.
Make sure its all thoroughly
mixed. It should be
smelling amazing by now.
Using a sharp knife, cut the
Jalapeno peppers in half and
remove the seeds. Once they have
been cleaned, begin stuffing
them with the meat mixture.
Stuff them with liberal amounts
of meat. Load them up!
Once the Jalapeno peppers are
all stuffed place them on a
greased smoking racks. Shake on
Obie Cue's BBQ Bomber rub or the
rub of your choice. It's time to
pr-heat the cooker to 225.
Place the ABT's into your cooker
and cook @ 225 until the
internal temperature of the meat
reaches 160 degrees. At this
point pull the ABT's and let
them rest for 15 minutes. Serve
them up with your favorite
dipping sauces and enjoy.
