This recipe has two recipe
components. We will start with
the sauce from scratch. I was
looking for a zesty flavored
sauce when I came up with this
and I believe this is one of my
best BBQ sauces. I hope you
enjoy it. Start off with a medium
sauce pan and add all the
ingredients listed above. It's
just that easy! Once the
ingredients are in the pan turn
the heat on to medium. Slowly
stir the contents and bring the
sauce to a simmer.
When the sauce begins to
simmer reduce the heat to a
medium low. Continue to simmer.
Stir occasionally and make sure
the sauce is well mixed and free
of lumps ground
mustard.
Let the sauce cool and your
done. It's time to start on
prepping the wings. This
smoke usually takes
approximately 3.5 to 3.7 hours
to cook.
Start
by rinsing 5 lbs. of chicken
party wings. These are the wings
that have already been divided.
They can be found in the meat
department at your local grocer.
After rinsing, pat dry with
paper towels.
Lay the party wings out on
two cookie sheets. Place the
drum pieces on one cookie sheet
and the wing tip section on the
other. This will make it easier
to transfer them to smoking
trays so they can be moved
around in the cooking chamber
later in the process.
Melt 3/4 of a stick of real
butter. Mop the wings with the
butter. Once one side is mopped
shake on a light dusting of
onion powder. Shake on a
liberal amount of Mrs. Dash
Garlic & Heb. Next shake on
the Mrs. Dash Southwest Chipotle
seasoning. This seasoning is
mostly flavor not much heat. Flip the
wing parts and season them just as you did the
last side. What we are after is
layers of flavor.
Transfer the wings to smoking
trays or grates. Let the party
wings sit for about 20 minutes
in the fridge.
Next place them in a pre-heated
smoker @ 225 - 230 degrees.
Smoke for about 1.5 hours
then flip the wing parts over.
Mop the top side with the
Orange Marmalade Chipotle BBQ Sauce. Cook
1 hour then turn the chicken
and mop with the BBQ
Sauce again.
When the wings reach
160 degrees (approx. 40
minutes), mop them again. Increase
cooker temp to 250 degrees and continue to
smoke for about 30 minutes or until the
internal temperature reaches 170
- 175
degrees. Once at temperature,
pull the party wings and serve
them up! You should have a nice
dark red glaze built up and they
should taste amazing!
These wings have a sweet but
zesty Orange & Chipotle flavor with just
the right of garlic and
smoke on
them. I have to say this is may
end up being my signature wing sauce! Hope you enjoy this
