This by far is my most tasty
burger recipe. For those of you
who have not tried Buffalo, the
meat is like beef but leaner yet
juicier and richer in flavor.
Your going to love these burger.
This recipe make 8 nicely sized
burger. First things first.
Pre-heat your cooker to 275
degrees. Slice 3 Jalapeno's in
half and remove the stem and
seeds. Wear cloves for this and
do not rub your eyes. Just a
tip... Slice off 3 thick slices
of red onion. Place the
Jalapenos, onion slices and 3
cloves garlic onto a rack and
place it into your cooker heated
to 275 degrees. Roast the
veggies until the Jalapenos and
onions tender up a bit. Roughly
1 hours. Pull the veggies at
this point and take them into
the kitchen.
Now it's time to make the
buffalo burger meat. In a medium
bowl mix 3 eggs, 1 tsp rosemary,
1 tsp Thyme, 1/2 tsp black
pepper, 1 tbsp Mad Hunky No
Sodium Rub and 3 tbsp
Worcestershire sauce. Mix
thoroughly.
Place 4 lbs. ground Buffalo into
a large mixing bowl. Using your
fingers, poke holes all over the
meat. Pour the egg, bread crumbs and spice mix
over the ground Buffalo. Using
your hands, thoroughly mix the
egg and spices into the meat.
Now chop the roasted onion,
garlic and peppers. Place them
in the mixing bowl with 1/8 cup
loosely packed sun dried
tomatoes. Mix the meat
thoroughly with your hands.
It's time to build the patties.
Using wax paper and your hands,
form desired sized patties. Once
the patties are formed shake on
a liberal amount of Tatonka Dust
or rub of your choice. Make sure
to coat both sides of every
burger.
Turn the heat up on your cooker
to 500 degrees. I prefer to use
a griddle on my cooker when
cooking these burgers. Place the
burgers on the flat griddle to
sear them. They will take about
4 to 5 minutes per side. You
want to cook them until the
internal temp reaches 160
degrees. While the burgers are
cooking I recommend you also
throw some virgin olive oil on
the griddle or in a pan and
sauté up some red onion to
top the burgers.
Time it right and by time you
flip the burgers you ten can put
the sautéed red onion on top.
Now comes the glorious part! Lay
on a couple slices of aged
Swiss.
By time the cheese melts you
should be at 160 degrees. Remove
the burgers and place on your
favorite buns. I chose onion
buns for this cook. A little
sweet relish and some Ketchup
and I was ready for my feast.
One bite and I fell in love. I
knew me and this recipe were
meant to be.
