If you have not tried my
Cherry Dr.
Pepper injected pork butt recipe
for BBQ pulled pork I highly
recommend you do so at least one
time. I have received nothing
but great feedback from those
who have.
In this recipe page I will
demonstrate how to take my BBQ
pulled pork and build "The
Ultimate BBQ Pulled Pork
Sandwich".
I'm talking about a pulled pork
sandwich with attitude! This
sammy will have you drooling
like a hound dog and leave you
in culinary bliss after you eat.
This sandwich will rock your
meal time!
So lets get to cooking! Get all
the ingredients listed above
together. To make things easier
use a smoking rack or tray to
transport things into the
cooker.
Using foil, make a couple foil
pans. One for the pork and
pineapple juice and one for the
chopped garlic and sliced red
onion. Put these ingredients in
the foil pans as shown in the
pictures. Place them on the
smoking rack with two
sliced of red bell pepper and
two slices of pineapple.
Place the rack into a smoker
pre-heated to 225 degrees. Smoke
the ingredients until the sliced
peppers and onion soften
up.
Remove the onion and garlic foil
and dump the contents into a
heat pan with a couple pads of
melted butter. Sautee the onions
and chopped garlic until the
garlic starts to brown. Be
careful not to burn the garlic.
Butter some buns and place them
butter side down on the smoker.
Turn the temp up to 280 degrees.
Once they brown a bit flip them
over and add a slice of pepper
Jack cheese to the bottom bun
and two slices of moist
Mozzarella to the top bun. Once
the cheese softens and melts
remove all the items from the
cooker. its time to build a
masterpiece.
Mix 1 cup of coleslaw with about
3 Tbps Coleslaw dressing. Do
this at build time so the slaw
stays crispy. We are going for
layers of flavor and texture. We
don't allow soggy slaw on our
sammy's in this house! Spread
the slaw on top the bottom bun.
Spoon on a heap of BBQ pulled
pork. Lay on the 2 slices of red
bell pepper. Next spoon on the
smoked & sautéed onions with
garlic. Lay down the 2 pineapple
rings and drizzle on some of my
Cherry Dr. Pepper BBQ sauce.
Don't be shy at any of this. If
it aint sloppy, it aint right!
Lower the upper bun down on to
this delicious work of art and
slice with a very sharp knife.
Yes stuff will drop out. Yes you
may dirty a shirt. Its so worth
it!
Serve with your favorites Adult
beverage. You won't need any
sides. There will be plenty on
the plate after the last bite of
bun is left. :-)
