I came up with this recipe
one day when I was just screwing
around with different flavors.
The family loved it so it's now
part of this site.
Lets start with the egg
mix. In a medium mixing bowl
combine the following.
4 Eggs 1/2 Cup Zesty Italian
Dressing 1/8 Cup Reduced
Sodium Worcestershire Sauce 1
Tbsp. Chopped Rosemary 1
Tbsp. Minced Garlic 1 Tsp.
Coarse Ground Pepper
Once all
the ingredients are in the bowl,
thoroughly mix the ingredients.
Set the bowl aside.
Next we will mix the
ground beef. Place 6 lbs. 80/20
ground beef into a large mixing
bowl. Using your fingers poke
multiple holes in the ground
beef. Pour the egg mix over the
ground beef. Next add the
egg mix and 1/2 of a sweet onion
finely chopped.
Once all the ingredients have
been added it's time to mix. Put
on some food grade gloves and
work the ingredients into the
ground beef. Mix thoroughly.
Once the ground beef has been
mixed, start forming your
patties. Once the patties are
formed, cover them and place
them in the fridge to rest 1
hour minimum. This allows the
rub and other ingredients to
meld with the ground beef.
This is a great time to pre-heat
your grill or cooker. These
burgers can be grilled or slow
cooked at 225-250 degrees on a
smoker/Grill. In this cook I'm
cooking the burgers on the
Scottsdale Santa Maria style
cooker by Arizona BBQ
Outfitters. I used the Argentine
grates and cooked over a Oak
wood fire.
Prior to cooking the beef
patties we need to sauté the
onions. In this cook I used a
cast iron skillet over an oak
would fire. You can easily do
this on your stove top. Heat the
skillet and add 1/2 stick
unsalted butter. Once the butter
has melted add 1 1/2 medium
sweet onions sliced into rings.
Pepper to taste. Frequently stir
the onions so they do not burn.
We want to caramelize the
onions. Ones they have
caramelized add 1/2 tsp. red
pepper flakes and 8 oz. of
Savory Beef Home Style Gravy. I
picked this gravy up at our
local Safeway grocer. Cook long
enough to heat the gravy. Remove
the onions from the skillet and
place in a bowl for later.
Next it's time to cook the
burgers. Place the beef patties
on your grates over a hot fire.
You should be able to hold your
hand over the grates for no
longer then 3 seconds. This is
the perfect grate temp. Cook the
burgers about 6 minutes per side
or until done to your liking. I
shoot for 150 - 160 degrees
internal temp.
Once you flip the burgers and
they have cooked about 4 minutes
add slices of cheddar cheese.
Once the cheese has melted
remove the burgers from the
grill.
Now it's time to build the
burgers. I used Kaiser Roll buns
with ample mayonnaise, Wickles
relish, Pepperoncini's, Ketchup
leaf lettuce and plenty of them
onion's!
Build it the way you like it of
course. The burgers should be
extremely juicy and tender.
